A team of divers discovered a pristine coral reef near the coast of Tahiti at depths beyond 30 meters below the surface, according to UNESCO.  The reef features rose-shaped corals that, together, span 3 kilometers (approximately 1.86 miles) in length and 60 meters (nearly 200 feet) wide. The most remarkable aspect of the discovery is that the reefs remain intact, unscathed by the bleaching events — largely caused by warming waters due to climate change — that have scarred so many other reefs around the world.  "It was magical to witness giant, beautiful rose corals which stretch for as far as the eye can see," said Alexis Rosenfeld, a French underwater photographer who was part of the team of international divers that made the discovery. "It was like a work of art." Cuong Pham, the founder of Red Boat fish sauce, has a new cookbook with recipes for the Lunar New Year, and more. The Lunar New Year, called Tet in Vietnam, starts on Feb. 1. As for what to prepare, you might consider thit kho trung (extra special caramelized pork) or lil banh chung (rice cakes filled with pork, mung beans and shallots) from "The Red Boat Fish Sauce Cookbook," which has a chapter about the holiday. There are many more satisfying but less elaborate recipes in this book by the founder of the excellent Red Boat fish sauce company, Cuong Pham — written with a food writer and a chef — including quick Red Boat bacon, shrimp and green beans; broccolini with garlic sauce; and chicken soup with cellophane noodles. Mickey Ollson, an Arizona native who as a child dreamed up plans for the Wildlife World Zoo, Aquarium & Safari Park, has died of cancer at 80. Ollson oversaw the zoo's rapid growth and worked on the grounds nearly every day. He also received the Zoological Association of America's Lifetime Achievement Award last year for his work in pioneering the West Valley's only zoo. It's not yet clear who will run the zoo going forward. His family owns the zoo, which spans 100 acres and has some 6,000 animals, and will decide its future and leadership, zoo spokesperson Kristy Morcom said. Ollson had bought the then-remote piece of land in the 1970s and operated an animal breeding farm. He converted it to the privately run Wildlife World Zoo in 1984. T HIS IS A part of the largest fish-breeding ground yet discovered. It occupies more than 240km 2 of the floor of the Weddell Sea, off Antarctica. Each nest is guarded by a notothenioid icefish, usually the father. Altogether, there are about 60m nests, housing more than 100bn eggs. The site was discovered by Autun Purser of the Helmholtz Centre for Polar and Marine Research, in Bremerhaven, and is reported in Current Biology . Dr Purser saw the first nests on a dive. Further dives revealed more. He and his colleagues then towed cameras over the site to discover its full extent. One reason animals live in crowds like this is to swamp predators. That can, though, backfire when the predator is a modern fishing vessel. For decades, there has been talk of making the Weddell Sea a protected area.
