Anyone can eat lobster': Salad And Go founders bring a $10 lobster roll to metro Phoenix - AZCentral.com

Is a $9.99 lobster roll too good to be true?

Try it yourself on Nov. 30 when Angie's Lobster makes its debut in Tempe, with additional locations in Phoenix, Glendale and Mesa scheduled to open next year.

Angie's Lobster, started by Salad And Go founders Tony and Roushan Christofellis, will open first as a food truck with walk-up service in Tempe while the drive-thru restaurant is completed. The drive-thru is expected to open in spring 2022.

The husband-and-wife team sold Salad And Go in the summer of 2021 and moved on to their next budget-friendly, drive-thru concept.

How lobster restaurant honors working-class mom

Angie's Lobster is named after Tony's mother Angela, who died from cancer in 2020.

Angela, born on the island of Lesvos, was a Greek immigrant and single parent. She worked at seafood restaurants throughout her life before opening her own shop outside of Boston.

"She was blue-collar and low frills. No person and no task were beneath her," the restaurant's website described.

Tony said he wanted to honor his mother through Angie's Lobster so that her grandchildren can always remember their yia yia. Lobster is considered a luxury food that only a certain group of people have access to, so he wanted to make it more affordable while remaining profitable, he said.

To bring prices down, Angie's Lobster uses a self-service model to keep teams small. The business cuts out extra expenses, such as straws and condiments besides Angie's Sauce. Since there are only two main menu items, the business focuses on fewer food supplies and can source them directly, rather than working through a distributor, Tony said.

Team members start at $16/hour and 10% of company ownership goes to 50 workers, he added.

"My sister and I didn't have the finest things in life, but mom wanted us to get into the best schools," Tony said. "We got into this school in Boston with rich kids. They had houses while we rented, nice cars, nice everything. We always felt like second-class citizens almost. It's almost personal to me because I don't want anyone to feel that. Anyone can eat lobster."

What's on the menu at Angie's Lobster?

Angie's Lobster will serve two meal options for $9.99: the lobster roll or fried lobster fingers, both served with fries, a toasted buttered bun and iced tea or lemonade. Meals will also come with a side of creamy Angie's Sauce, a secret recipe that Tony Christofellis declined to share.

The sauce was developed to go well with lobster, fries and bread, he said.

The restaurant uses only wild-caught Maine and Canadian lobster, no warm-water lobster or Norway lobster (also known as langoustine), according to a press release.

The food truck and soon-to-come drive-thru restaurant will take over a former Taco Bell location near the southeast corner of Hardy Drive and Baseline Road in Tempe.

Angie's Lobster does not accept cash, so customers should be ready to pay by debit or credit card or EBT.
